Disney sure knows how to tempt us with Easter treats. One minute we’re eyeing up a healthy snack, the next we’re drooling over the latest seasonal cupcake — talk about a tricky snack battle! (Usually, the sweet treats win, though)
In preparation for the upcoming Easter holiday, Disney has been releasing tons of springtime snacks throughout the parks, like Cookies and Cream Cheesecake and a Carrot Cake Cupcake! We’re dedicated to trying ALL of the Disney World snacks that pop up, and today, we got to try another adorable Easter dessert!
Today, we tried the Coconut Sugar Bunny Cupcake at Everything Pop at Disney’s Pop Century Resort. This carrot cake cupcake is filled with pineapple and topped with cream cheese buttercream and a coconut sugar bunny. The little bunny butt looks so cute!

Time for an (early) Easter treat!
We’ve tried many versions of an Easter Bunny Cupcake in Disney World, but this year, Disney went for a sweet pineapple filling — and we aren’t complaining! The cupcake is extremely moist and has a great carrot cake flavor (we’re big fans of carrot cake treats in Disney World), and somehow, the pineapple filling worked with the carrot cake. Yes, we’re just as shocked as you, but it’s true; the pineapple flavor wasn’t too sweet, and it paired nicely with the light, fluffy cream cheese frosting.

New cupcake, same old decorations!
Before you get too excited and dig right in, note that our cupcake was so moist that it didn’t stay together very well. In fact, it fell apart almost immediately after removing the cupcake wrapper! Overall, though, Disney seriously impressed us with this treat! If you like carrot cake, you’ll probably love this cupcake! On the other hand, if you prefer a classic chocolate or vanilla cupcake, you might want to try something else.

Carrot cake and pineapple?! Interesting!
