Today is the grand opening of Gideon’s Bakehouse in Disney Springs! We’ve been buzzing with excitement ever since we visited on the first day of their soft opening back in December!

After a brief closure following their soft opening, Gideon’s is BACK in action with scrumptious cookies, cake, and coffee! (Oh, and did we mention some FREE goodies for the opening too?)

To celebrate their grand opening, Gideon’s is serving up TEN flavors of cookies today. It looks like people are excited, because there is currently and 11 HOUR WAIT! Half of the cookies being served today are Limited-Edition flavors that you wouldn’t normally find unless you visit during a specific month or season! Oh, Gideon’s, you spoil us. 😍

We tried three of these Limited Edition flavors on our last trip to Gideon’s (Santa’s White Christmas, the Coffee Cake Cookie, and Coffee Toffee Cookie), but there were two more that we needed in our bellies ASAP.

Frankenstein

First up is The Frankenstein, normally only seen in October as a seasonal Halloween dessert at Gideon’s. “It’s ALIIIIIVE” and making a special appearance TODAY for the grand opening! According to Gideon’s menu, this monstrosity includes “parts of all the candies you want in your bag,” and topped with M&M’s.

Inside, you’ll find crushed Oreo and Chocolate Pieces. Essentially, the ingredients of this cookie are a chocolate lover’s paradise. Aren’t you practically melting just looking at it?? (We are!)

Good ole’ Frank might look like a beaut, but it’s one of our FAVORITE cookies at Gideon’s too, along with many other fans! The cookie is packed with so much Oreo, cookie crumble, and M&Ms that there is cookie or candy in every bite, making it just as over the top and wonderful as its namesake.

On the other side of the cookie spectrum, we also had a treat that combined chocolate with one of our personal favorite flavors: peanut butter!

Chocolate Peanut Butter Swirl

Another Limited Edition flavor available today is the Chocolate Peanut Butter Swirl. This cookie comes in around a whopping 1/2 pound and is a combo of their Peanut Butter dough swirled with their Triple Chocolate dough (!!!).

It’s topped with Chocolate Chips, Peanut Butter Chips, and House-made Candied Peanuts for the perfect combo of sweet and salty.

The half-pound part of the cookie might seem like the biggest feat, but the best part of the Chocolate Peanut Butter Swirl is just how rich and flavorful it is. It may even be richer than the Frankenstein Cookie, which is saying a lot with all those ingredients! The Chocolate Peanut Butter Swirl is definitely made for people who love peanut butter, BUT it’s a great treat for anyone who just loves sweet and salty paired together.

After those amazingly rich and filling cookies, we needed a sip of something to wash it all down!

Cold Brew

One of our standouts the last time we visited Gideon’s was their Peanut Butter Cold Brew. This flavor was available again today, along with their Ginger Snap Cold Brew and Gideon’s White Cold Brew. The Peanut Butter version of the cold brew was thicker and richer (similar to its peanut butter cookie counterpart)…

…while the Ginger Snap Cold Brew had a nice kick of spice to complement the sweet flavors of the bakery’s treats.
