Sometimes, food just tastes better if it’s Mickey-shaped!
We’d gladly take Mickey-shaped food over regular food any day! Even if we’re not in the parks, eating Mickey-shaped foods always adds a little extra fun to our meals, (as long as we don’t think too much about the fact that we’re biting our oldest Disney friend’s head off.) Anyways, we’re here for anything and everything Mickey-shaped, and we just found a savory recipe that fits the bill!
If you’re looking to try a new recipe, or want to give someone a holiday Mickey surprise, check out this recipe from D23! They just shared their Spinach and Ricotta Mickey Pinwheel recipe, and it’s a Mickey-shaped delight!
Here’s everything you’ll need for this recipe!
Ingredients:
- 1 package of frozen puff pastry (2 sheets)
- 1/3 cup of shredded parmesan cheese
- 1 cup of ricotta cheese
- 2 cloves of garlic
- 6 oz of fresh spinach
- 1 tablespoon of olive oil
- 1 large egg
- 1 tablespoon of water
- Salt and pepper (to taste)
Once you’ve gathered up all of your ingredients, here’s what you have to do!
Instructions
- Thaw the puff pastry sheets.
- Heat the olive oil on medium heat in a pan, then add the garlic and cook until fragrant (roughly 30 seconds.)
- Add the spinach and stir together, then cover and cook for 2-3 minutes while stirring occasionally until the spinach is wilted.
- Remove the lid, and cook for 2-3 more minutes, or until all of the water is evaporated. Then, remove from heat.
- Mix the parmesan, spinach, and ricotta in a large bowl. Season with salt and pepper to taste.
- Cover a baking sheet with parchment paper, and lay the puff pastry on top. Using a pizza cutter or knife, cut one of the sheets in half. (Leave the other one whole!)
- Make an egg wash in a small bowl by combining the egg and water. Brush the surface of each pastry sheet with the egg wash.
- Spread the spinach and cheese mixture evenly on the pastry sheets, leaving an inch of space at the top and bottom of the sheet.
- Roll up each sheet starting at the wide end. The empty pastry on each sheet should help it all stick together. You should have 1 big log and 2 smaller logs of pastry once you roll all 3 sheets.
- Wrap each log in plastic wrap and chill for at least an hour.
- Preheat oven to 400° F.
- Take your logs out of the refrigerator and cut each into 1/2 inch slices.
- Lay the slices out on a baking sheet covered with parchment paper. Each larger slice should have 2 smaller slices at the top of it, creating the Mickey shape! Stick the pastries together by pinching them.
- Brush the top of each pinwheel with egg wash.
- Bake for 20-25 minutes, or until lightly browned and puffy! Take them out of the oven, serve warm, and enjoy!
And there you have it! That’s how you make Spinach Ricotta Mickey Pinwheels!
