Earlier today, we chatted about The Art of Inspiration video from Disney Vacation Club that gives a first look into the creation of Disney’s Riviera Resort, which officially opens in Disney World on December 16th.

Now we want to tell you about some more details we learned from the video, including a closer look at Topolino’s Terrace — Flavors of the Riviera.

Topolino’s Terrace is a rooftop restaurant and lounge that will offer sweeping views of Epcot and Disney’s Hollywood Studios, including views of the nighttime shows at those parks. The restaurant will offer a prix fixe character breakfast and an a la carte dinner — you can take a look at the menu here!
A section of The Art of Inspiration video focuses on Michael Gonsalves, Chef de Cuisine in the Disney Flavor Lab.

During the video, Gonsalves discusses the quality ingredients that are being used in the Topolino’s Terrace menu. He specifically explains how they’ve tested six different olive oils, several types and treatments of garlic, and a variety of tomatoes.

When working with a type of pasta, they would study the region where the pasta is used and think about what would pair well with it.

Just like the rest of the resort, Topolino’s Terrace takes inspiration from Walt Disney’s extensive travels to Europe.
