One of the best parts of a new month is seeing what kind of new snacks drop in Disney World. Now, we all know that Gideon’s Bakehouse drops new cookies and cold brews every month, so we couldn’t wait to see what the bakery had in store for January 2026.

Well, we just found out what those new snacks are, and let’s just say we made a beeline to Gideon’s Bakehouse to try them out. So keep reading to see what we think of these new treats!
The new Gideon’s Bakehouse menu this month features some banana-flavored items, and if you love bananas, you’ll GO bananas over the Banana Box Pie Cookie for $7. This cookie is made with banana (the fresh and real kind), toffee, and spices, and topped with white chocolate and crunchy candied vanilla wafers. Y’all…this is bananas foster in cookie form because that’s what it tastes like. It’s also one of the more original Gideon’s flavors we’ve had in a while.
Banana Box Pie Cookie
We tasted a hint of caramel in the cookie, along with the toffee, but the banana and spices are really what makes this baby sing, although you can also get a hint of sea salt with it, too. There’s a nice chewiness to it, as well, that we assume is because of the caramel. It offers the cookie a nice texture. So, yeah, we are SOLD. Excuse us while we go back and get another one.
The banana flavor is REAL
But first, we also had to try the Banana Nitro Cold Brew for $6.50. This one also has real banana in it, and you can tell. You might wonder if banana goes with coffee, but cold brew is so smooth and sweet that the banana flavor blends perfectly with it. Again, we’re totally getting bananas foster vibes. The cold brew cream at the top is banana-flavored, so be sure to swirl that around in the drink real good.
Banana Nitro Cold Brew
This is just a well-balanced coffee drink that isn’t overcloyingly banana or sweet. Gideon’s has us craving another one of these, too. But we have an idea…what if Gideon’s mixed this banana cold brew with its amazing peanut butter cold brew? Um…someone let us know if that happens!
