Well, that was fast! The Walt Disney World Dolphin Resort just recently closed one of the upscale restaurants, and we were hoping it wouldn’t take too long for the new restaurant arriving in its place to open up.

Bourbon Steak by Michael Mina is taking the place of Shula’s Steak House, which just closed less than 48 hours ago at the time of writing. Now, reservations are ALREADY open for this new restaurant, and we know when it’s opening!

Reservations are now available for Bourbon Steak Orlando at the Walt Disney World Swan and Dolphin on OpenTable for as early as July 26th! Reservations can be made today, June 16th, right at this very second, and you bet we already made our reservation. The restaurant didn’t announce this as its opening date, so it’s possible it opens before the 26th without reservations, but we’ll keep an eye on it and let you know!

Michael Mina is a James Beard and Michelin-recognized chef and restaurateur, and will bring his celebrated, modern take on the American steakhouse. Here you’ll find premium cuts of beef and seafood infused with global flavors, showcasing the three core elements of Mina’s culinary philosophy: product, technique, and presentation. Expertly crafted cocktails will also be available, as well as an extensive wine list and decadent signature desserts.

Currently, the restaurant will be open from 5-11 PM each day, so dinner is the only meal available at this spot. Additionally, there is a dress code that will need to be followed here — the restaurant asks that guests “dress accordingly in attire that respects the restaurant’s sophisticated and upscale aesthetic.” Clothing that is dirty, unkept, or has offensive language or graphics on it, and swimwear will not be allowed.
