REVIEW: Key Lime Pie Lovers Need To RUN to Gideon's Bakehouse at Disney Springs

Flavors of Florida has officially kicked off at Disney Springs, and we’re bringing you our reviews of the BEST eats and drinks you need to try.

From June 27th to August 10th, 2025, eateries and restaurants all around Disney Springs are showcasing MORE THAN 90 limited-time dishes and drinks from 45+ restaurants for this event — including Gideon’s Bakehouse, which is serving up some sweet treats. Let’s check them out!

Gideon’s Bakehouse is serving up two exclusive Flavors of Florida treats, so of course, we got them both! We’re kicking things off with the Key Lime Ice Box Pie, which you can get for $10. It’s made with layers of Key lime curd with a Key lime cream filling and graham cracker crust.

This guy does not do well in the heat, so they recommend eating it immediately after you get it, and it’s easy to see why. There is a sweet and crumbly graham cracker crust on the bottom, and then it is topped with a Key lime custard — almost like a mousse. It is very light and airy and has a great amount of Key lime flavor. There is some tartness to it, and it is also very sweet. Then it is drizzled with some Key lime curd and topped with graham cracker crust crumbles.

This was a treat

There is also a bit of the curd between the crust and the mousse. The curd has a very strong Key lime flavor and is silky smooth. We loved how much Key lime flavor there was in this guy, and the lighter consistency of the filling is very interesting. It is definitely lighter than a normal Key lime pie. The crust is sweet and a bit crunchy, and we really enjoyed it, and also wish there was a bit more filling to crust ratio. Overall, this was a really tasty Key lime treat if you are okay with a lighter filling. Just be sure to eat this right after you get it!

It melts quickly!

We also grabbed the Lemon Cold Brew, which is $6.50 for a small size. This is locally roasted coffee beans and house-made lemonade.

Our reporter, who tried this, didn’t quite know how lemonade and cold brew would work together, but it really surprised her! It is definitely more cold brew in the cold brew to lemonade ratio, and the lemonade ends up tasting like a lemon syrup rather than full-on lemonade. You still have the bitterness of the coffee, but we didn’t taste a lot of sourness from the lemonade. It is a very sweet lemon flavor, and it is a fairly light flavor. You can taste it, but it doesn’t whack you in the taste buds. You can get it in a small or large size.
