A BRAND-NEW restaurant is coming to Disney World later this year.
In the spring of 2025, Disney confirmed that the Dolphin Resort’s Shula’s Steakhouse – – named for famous Miami Dolphins coach Don Shula – – would be closing in June to make way for a new dining experience: Bourbon Steak.
Celebrity chef Michael Mina launched Bourbon Steak as “a tribute to the classic American steakhouse” nearly 20 years ago. Currently, there are locations in Del Ray Beach, Las Vegas, Los Angeles, Miami, Nashville, New York, Orange County, Scottsdale, and Washington D.C.
The restaurant’s menu includes “prime cuts of beef, fresh seafood, and an extensive selection of wines and spirits, including rare and vintage bourbon selections,” made with locally sourced ingredients.
From an atmospheric standpoint, the restaurant’s aim is to emerge diners in an “atmosphere of sophistication and warmth” with “elegant yet comfortable decor” that creates the “ideal backdrop for a memorable evening, whether (they’re) celebrating a special occasion or simply indulging in the pleasures of a fine meal.”
Recently, we paid a visit to the Orange County, California, location in order to get a feel for Bourbon Steak prior to its Disney World opening, and we saw both the food offerings and the decor firsthand.
Located at the Waldorf Astoria in Dana Point, California, the restaurant had an upscale, oceanfront vibe, featuring decor heavy on open spaces…
… and views of the Pacific Ocean.
While the new Dolphin location likely won’t mimic the decor exactly, we’d imagine it will fall into a similar luxury, elegant design aesthetic.
From a menu standpoint, judging by the menus offered at other locations, including Miami and Del Ray Beach, we’d imagine the Orlando outpost will feature similar offerings – – including the French Fry Flight – – with some Floridan twists.

Wow. The prices!!
We will not be eating at this restaurant. The prices are ridiculous. There are so many great steak places in Orlando for more reasonable prices.
No loss losing Shula’s. What many suggested was a great fine dining experience was not for us. Dinner for 4 birthday for adult daughter. Bar and bartender while we waited for our reservation, was great. Ended there. The over done pompous but not good service was the start. Throw a white towel over a busboys arm doesn’t make him your assistant. Food was okay, except the so call airline chicken for chickatarien we had with us. It was grey beige horrible. I know what airline chicken looks like, it should have never left the kitchen.
Many other oops, and a waste of a $600 bill.
Bourbon steak house, I agree that some not all prices are a bit high. Even for a fine dining steakhouse. I compare to Hyde Park Steak house and though not inexpensive many things are less than the menu shown here.
Certain things I find on par for a fine dining steakhouse and many of the items are Japanese waygu which is more costly. The sides at restaurants like this are usually quite large and a good server will tell you it can be shared. Many times a couple of sides can serve a party of 4.
Wondering as the menu is from Dana Point, Ca. It the pricing higher due to area. Very affluent area and because everything cost more in CA.
I hope this place crashes.. how dare they charge such prices
