When Disney Springs began its initial reopening, the 4 Rivers Cantina Barbacoa Truck sprung back into action as well, serving up awesome eats with new health and safety measures. But soon after, the food truck once again closed, and we were left to snag our Disney Springs snacks elsewhere.

Well, if you’ve been missing 4 Rivers as much as we have, we’ve got some great news — the Disney Springs food truck is now reopened as of 5PM today!

New Items on the Menu at 4 Rivers Cantina Barbacoa Food Truck in Disney Springs!

That’s right, after the temporary closure, the 4 Rivers Cantina Barbacoa Food Truck is BACK, and they’re serving up new dishes in addition to its signature favorites like Taco Cones and Burrito Bowls!

4 Rivers Barbacoa Food Truck

Let’s dive into the new menu items! First, there’s the Birria Tacos, made with beef Birria on three crispy griddled corn tortillas with melted Oaxaca cheese and served with beef jus and onion-cilantro sauce! 

There’s also a Birra Quesadilla, which is beef Birria with melted Oaxaca cheese on a crispy griddled flour tortilla, also served with rich beef jus and onion-cilantro sauce.

We can’t wait to try the Mulita, a crispy tortilla stack with melted Oaxaca cheese and choice of filling, topped with queso fresco and onion cilantro salsa.

The new Roasted Sweet Potato Mulita looks SO yummy with its Oaxaca melted cheese, queso fresco, and onion cilantro salsa. Bonus: you can now substitute sweet potato as a vegetarian option in any dish!

Don’t think for a second that we forgot about dessert! The food truck is serving up a Margarita Bar, featuring lime mousse, white chocolate, and flake salt on a graham cracker crust. Sounds refreshing and DELISH!

The 4 Rivers Cantina Barbacoa Food Truck will be open from 5pm until 10pm Monday through Wednesday, 3pm until 10pm Thursday and Friday, and noon until 10pm Saturday and Sunday.
